One of my favourite meals, is Nachos!

When I decided to go vegan, I was most worried about not being able to eat cheese. I grew up a significant portion of my life in France, so cheese was a necessary and daily occurrence. One of the first things I did when researching veganism was to find plant based alternatives to my favourite snack.

Vegan alternatives are now easy to find in most main supermarkets, and there is a great selection in any whole foods or vegan stores. In this Recipe, I used Notzarella. Australia’s meltable, shredable non dairy cheese. It costs around AU$7.50 for 250g. This might seem a bit pricey in comparison to dairy cheese, but if one factors in the prices of vegetables vs meat, I happily spent the extra money on non dairy cheese.

For my Vegan Nachos I put the following ingredients on top of my tortilla chips and baked for ten minutes.

  • Red Kidney beans (one can)
  • Sweet corn (half a can)
  • Half a red onion (chopped)
  • 2 diced tomatoes
  • 100g of Notzarella

I cannot have nachos without Guacamole. I always make my own by using :

  • One avocado
  • 1/2 Red Onion
  • 1/2 finely chopped chilli pepper(I did not have any this time)
  • 1/2 diced tomato
  • Squeeze some Lemon in for flavour
  • Sea Salt & Ground pepperMix all the ingredients together and enjoy.

Absolutely delicious! I used to make it with some sour cream, however this plant based alternative is just as tasty with the extra benefits for health and saving the cute animals 🙂

Please let me know if you try a vegan version of nachos, I know personally, I couldn’t live if veganism meant I couldn’t eat one of my favourite meals!
