One of the biggest questions I have received coming up to the holiday season, is what will you eat for christmas? In Czech Republic the traditional Christmas Dinner is Carp and Potato Salad. This year I will however be attempting several recipes to try find the perfect Vegan Christmas Recipe Idea.

For this two course meal I decided to make a Chargrilled Vegetable Couscous with a Watermelon and Mint Salad.

Water Melon Mint Salad Entrée

  • Watermelon
  • Mint
  • Lime
  • Pumpkin Seeds
  • Powdered Cinnamon Sugar

Chop up the watermelon with one of the fancy buzzfeed techniques. Add some shredded mint and pumpkin seeds. Drizzle the salad with Lime Juice and sprinkle Cinnamon Sugar on top.


Char-grilled Vegetable Couscous

The main course ingredients include :

  • Couscous
  • Broccolini
  • Capsicum
  • Mushroom
  • Lime
  • Zucchini
  • Pumpkin Seeds

Cut the vegetables into thin strips, and grill them until golden brown.

For each cup of dry couscous, use 1 1/2 cups of water. Bring to boil in saucepan. Add 1/2 tsp. salt to the water. Pour 1 cup couscous into boiling water, stir once with a spoon, cover with a lid, and remove from heat. Once cooked, add a little bit of lime to taste and a handful of pumpkin seeds.

Once the vegetables are char-grilled, mix them into the couscous and voila! Main Course is ready! A rather delicious first try for a potential Christmas Meal Substitute.
