For anyone who knows me and my family, they know one thing : Apple Strudl.
My mother is the queen of making apple strudl. At any family get together, there would be mounds of mouth watering, crispy apple filled pastry.
I was recently thinking about all the meals my mother used to make, and realized. It is 100% Vegan!!!
All you need is:
- Walnuts (Optional)
- Vegan Puff Pastry
The hardest part of this recipe is grating the apples. I always manage to cut my fingers on the grater. So.. caution if you’re anything like me!
Once the apples are grated, squeeze some of the juice out into a cup. Put the squeezed grated apples in a bowl ready for placing in the pastry. Squeezing the apple serves the dual purpose of ensuring the juicy grated apples do not saturate the pastry and make it fall apart and creating delicious fresh apple juice.
Now, lay the pastry down and cut in in half. Along the middle of each of the halves, place the apples. Ensure you can still close the pastry over from each side. Then squeeze the lemon on top of it and sprinkle cinnamon. My mother used to add sugar and walnuts, so that is an option!
The next part requires speed! You need to close the pastry and press it down with a fork to ensure it sticks. If you wait too long, the pastry will begin to dry up and not stick quite as nicely. Repeat this until you have used up all of your grated apples.
Now all you have to do is sit back and wait.
To serve : It’s up to you! You can add vegan ice cream or cream. Fresh raspberries or strawberries and castor sugar.
This time, I sprinkled it with some cinnamon sugar, dried cranberries and added a slice of lemon to squeeze over the top.
This is probably the only dessert I have ever enjoyed or made myself. It is a piece of home wherever I go. A scrumptious, easy to make crowd pleaser!
