To be honest with you guys, I think calling this paprticular recipe mac and cheese is a little bit of a lie. That is simply because unless I were to use some heavily processed soy or coconut products, I would not be able to recreate the cheesiness and goeyness of real cheese. The result of this mac and cheese like recipe however : is much much much healthier, filled with nutrients, vitamins and all the servings of vegetables you need per day. As a bonus, it is an extremely fast and filling recipe. So lets get into it. Check out the quick video here!

For the Mac you will need :

  • 1 cup of boiled pasta

For the ‘cheese’ you will need

  • 1 Potatoe
  • 1 Carrot
  • 1 Onion
  • 1/4 cup of nutritional yeast
  • 1 cup of cashews
  • Pepper
  • Paprika
  • Cumin
  • Lemon

The process of making it has two parts.

  1. Chop of the vegetables, and boil them in water until they are soft.
  2. Place the cooked vegetables and remainder of the ingredients into a blender, and blend until smooth.

Once all is blended until smooth. Pour a small amount of the pasta and serve with a little salt. Usually, you will have left over ‘cheese’ which also works wonderfully well as a dip. You can that that to some homemade hummus and guacamole and have a chips party!
