Breakfast is the most important meal of the day, and I always like to start my days with avocado. Since I have become vegan, avocado has become my everything. A perfect replacement for butter on bread. You can see it is one of the meals featured in my, what I eat in a day roadtrip edition video. The avocado is a perfect base for any vegetables you can find in the fridge or pantry. My personal favourite has to be red onion and tomato.
6 Ingredients and you are ready to go! Bread, avocado, onion, tomato and salt & pepper for flavour! You can always add some lemon juice to spice it up!
The only downside, is not all bread is vegan. I have no idea why, but Australian bread makers decide to add everything from soy, to milk, to who knows what else. Even though bread is typically vegan! I am trying to find a local baker which sticks to the basic bread ingredients, or better yet : make my own bread. This will not only ensure that the bread is vegan but also minimise packaging and strive towards zero waste lifestyle!
