During my week of no oil, I tried to branch out with the types of food I cooked. So I challenged myself with a vegan stir fry. NO OIL! If you have a good pan, there is really no reason at all to be adding oil to your meals.

So lets have a look at the ingredients :

  • 1/2 head of Broccoli
  • Lots of mushrooms (remember, you can never have enough)
  • 1/2 Zucchini
  • 1 Onion
  • Some grated Ginger
  • Soy Sauce

I start off by frying the broccoli and zucchini, and if I am concerned about them being too dry I add some mushroom for additional moisture!

Once all the veggies are fried to perfection, add the ginger, soy sauce and some raw sugar for taste. Let it simmer on a low heat until you’re happy.

Of course, you should be cooking rice in the background to ensure you have what to eat the delicious stir fry with! I still struggle with cooking rice even if I use the rule of thumb : 2 cups of water for 1 cup of rice.

I also ensure to stir the rice often so it does not stick the pan!
