Another one in my dessert series, carrot cake! This has always been a favourite of mine, and I am happy to say that is very easy to veganize!

The ingredients for this scrumptious carrot cake :

Carrot Cake Ingredients:

  • A whole Grated Carrrots
  • 2 cups of Flour
  • 2 cups of Brown Sugar
  • Cup of Almond/Soy Milk
  • 3 cups of water
  • 1 Teaspoon of Baking Soda

Carrot Cake Frosting:

  • Icing Sugar
  • Minimal amounts of Water
  • Pine nuts

If you want more carrot cake, just add more of the ingredients. Honestly, I found that the amounts of ingredients do not matter and I like playing around with them to find the perfect combination!

Add all the dry ingredients into a bowl and mix them!

Add the milk and water into the mixture. At this point you can add raisins!

Put the mixture into a cake pan or like I like to do, cupcake pans! This attempts to limit the amount of carrot cake I eat. It never works.

Then you can add a delicious frosting on top!

All you need to do :

Mix icing sugar and water. To make sure it does not melt off the cupcakes/cake, place them in the fridge for a couple of hours before hand.
