I was never the biggest fan of sweet things, my mother lovingly recalling the many times I demolished the whole bowl of olives at dinner parties when I was just three. I would love to have a birthday cake once a year topped with as many berries as possible, but apart from that, pancakes and apple strudl, I would hardly ever eat anything sweet. Now that I have started on this vegan journey, I have seen so many posts, videos and displayed of scrumptious looking cakes proudly advertising “100% VEGAN”. So I decided, why not give it a try?
In my first instalment of vegan desserts I decided to go after the classic Brownie. How could I make a brownie without using any animal products? Easy, use avocado and black beans instead. If you are more of a visual learner, I have also made this video with some kick-butt music by my good friend Graham Moes.
For this recipe, (which makes six brownie cupcakes, because I have no other baking tray) you will need the following
- 1 avocado
- 1 can of black beans
- 1 bar of black chocolate
- 3 spoons of Cocoa powder
- 2 spoons of sugar
- 1 teaspoon of vanilla extract
- Pinch of salt
- 1 Teaspoon of baking powder
and a blender.
Step 1 :
Blend the avocado and black beans in your blender. I hope it is better than the five dollar one in my apartment, because it took several attempts, constant forking and slight insanity.
Step 2 :
Add everything else into the mix.
Put the goo into the baking trays and top with walnuts
Step 4 :
Shoot! Forgot to preheat the oven to 200 °C
Step 5 :
Place the tray into the oven for 20 minutes. (Checking back frequently)
Step 6 :
Enjoy the scrumptious, cruelty free, veggie filled brownies!
