I grew up in Moldova where many of the foods I was fed in preschool were some unknown mix of vegetables and meat. One of my friends last year showed me a delicious vegan version of the Borscht classic. Justyna crafted a miracle and showed me how delicious these eastern european dishes were if you weren’t scared of what some unknown meaty substance in your mouth was. I decided to try out a similar recipe, however unlike Justyna, I am terrible lazy and pretty useless in the kitchen.

I therefore developed a simple 5 ingredient borscht recipe : making it minimalistic, whole foods and delicious! Check out the quick video here.

So all you will need is :

  • 2-3 Beetroots
  • 2 Potatoes
  • 2 Onions
  • 1/2 Cabbage
  • 1/2 lemon

Of course, if you have any more or less of these ingredients, that’s also okay. The beauty of the borscht is that its a concoction made for broke vegans with fridges right before shopping.

Cooking it is really simple :

  1. Sautee the onions with the beetroot until soft.

2. Throw in the remainder of the vegetables, add 2 cups of water and let cook for around 40 minutes.

3. After everything inside is nice and soft, you may add some pepper, however I just like squeezing the lemon and add some soy yogurt to serve.
